Bidra med feedbackWe had an incredible tasting menu at Evo. We were in a smaller back dining room, which was cozy and we had some great interactions with the staff. The who place is a little too brightly lit for our taste, but we found that to be true all over Italy. The slow cooked egg, served in a cracked ceramic egg, served with black truffle and almond foam was a standout. I also loved the olive oil menu. You could taste, pick (and pay for a bottle of olive oil to have with your meal. We purchased one, used it during dinner and then took it with us to use for the rest of our trip! Our waiter was very excited to talk with us because he had spent a year working in an Italian restaurant in San Francisco. And the chef came out to meet everyone, and when we told him we had been in Le Marche, he shared that a friend of his lost his restaurant in those horrible rains we had (Sept 2022. A bunch of chef friends from all over Italy are going to get together in the off-season to see if they can help him rebuild. A great experience with unique tasty food.

Near the Sovereign Trullo, the EVO restaurant is a pleasant discovery that confirms expectations. A good tasting menu proposal (with a dose of elasticity that never spoils). Well built and well matched dishes. XXL ears are excellent, but in general all tasted courses deserved. A small note about desserts (as said with a lot of honesty even to those who followed us and guided us in the tasting). I missed the wow effect that in the other dishes came thanks to interesting research and combinations, but anyway, also desserts, were tasty. A plausible service, attentive and punctual.
Once again an exciting experience that led us to know the refined cuisine proposed by EVO and its brigade. Exhibiting to distinguish the proposed oil with bread, taralli and homemade grissini. Our choice, very oriented to the local cuisine and on the advice of chef Gianvito was nice presented both in the description and in the engagement. The cuisine of EVO draws inspiration from the tradition, true value of the territory, with a refined phase of experimentation, game, study and attention to detail, favouring exclusively the organic vegetables of their garden and the choice of wines and oils exclusively Puglia, coming from local productions, mostly with direct availability. Culinary experience absolutely to try if in the area.
