The Assembly - Eagle

We live in Eagle and love going to this restaurant for date nights or dinners with friends. Last week, we hosted a private party there for my wife's birthday, and it was a hit! Planning the party was easy, thanks to Jaime and Caleb who offered us different price options and menus to choose from. The attention to detail at this place is impressive, and the signature drinks they served were delicious. The staff was very attentive and made sure everything ran smoothly. And of course, the food was amazing. Don't forget to ask for a special custom dessert - the homemade lime cake was so good! Thank you to the restaurant for hosting such a great party - many of our guests said it was the best party they had been to as well!

This restaurant is a hidden gem, located just before I70. I tried the al pastor pork chop and a mezcal old fashioned, both of which were incredible. The staff was super friendly, creating a great overall atmosphere. I will definitely be returning in the future.

Every bite was incredibly delicious. The scallops were perfection and the braised short rib was excellent. The staff was friendly and the concise menu was impressive. The chef uses the highest quality ingredients. Highly recommended and we will definitely be returning next time we are in the city.

I love it absolutely here. eating. the small details as they decorate the plates. the drinks. the personal. they are all so friendly. this business obviously makes something right with eating and working with! highly recommended.

Very, very slow service took this down to 3 stars from four. Bright, open space. Unfortunately the service was horrific. The server seemed to be by us all the time but never bringing anything we needed or asking if we needed anything it was very strange. The food was all pretty good but nothing was spectacular. The charcuterie board had way too much bread and not enough meat or cheese. The calamari appetizer tasted good but it was quite small. The salmon with lentils was quite tasty. The Maitake mushroom entree was quite delicious and highly recommended. The brown butter rice crispy dessert was tasty but not as good as everyone else had made it out to be. Maybe once Covid is past and they can get more servers things will be better.
