Highs and lows are balanced A birthday dinner begins with a nice table for two. The service is friendly and accommodating. We feel very comfortable right away. A greeting from the kitchen kicks off: a salmon tartare, very finely sliced, the taste of the salmon was emphasized very well. In addition, a small horseradish topping, kept very mild but wonderfully complementing the salmon. Appetizers The nut salad with egg is overloaded with eggs. The egg taste itself is difficult to feel. What was done with the egg? We can't figure it out. The tureen: an incredible experience, a wonderful tureen. She is the highlight of the evening. It is fine, tastes intense and the consistency is outstanding. The brioche is very fluffy and complements the dish perfectly. Thank you for this tureen! Quince and carrot soup Not listed on the menu, but we think it's made with a beef broth. Naming would be advisable for vegetarians, if so. Taittinger Comte 2007 An excellent champagne that we enjoy very much. The first bottle is coming to an end as the main course begins. The second bottle same label, same vintage is not quite satisfactory from the cork point of view. We taste and point out that the second bottle has much more acidity and a bitter finish. The waitress doesn't quite know how to react. But we don't want to detract from the mood and let it be poured. But unfortunately we can't bring the glass down. It's a pity about the nice wine, which of course we pay for. That's why we approach the Taittinger winery. Unfortunately, the remaining bitterness reduces our enjoyment of the main course. Nut crusted venison The perfectly roasted venison is surrounded by a nut crust that unfortunately is at odds with the venison. She doesn't highlight the deer, she buries it. It's a pity, but an exciting idea that definitely needs to be expanded. The crust can be scraped off and the full enjoyment of the deer meat is back. The spinach on aubergine is again a treat. An incredible taste! Cheese spaetzli with apple sauce A simple dish, which otherwise harbors a certain heaviness, experiences a lightness that allows a new experience of Käsespätzli. That is very nice. With a little extra refinement, the dish could be more than just good. It still looks a bit bland. service The hostess herself holds back. At the latest with the Taittinger we would have thought that she would come by herself. But we didn't want to belittle the birthday meal with a complaint, so in this mood it was fine with us if she didn't react. But the staff stands out from her: everyone is extremely friendly and sometimes you can hardly tell when you're talking. That's pretty much perfect service in our eyes! In the cigar lounge we enjoy a dessert that is crowned with a birthday surprise. A heartfelt thank you! Conclusion: yes and no. In this price range (SFr. 640. a little more has to be right. Nevertheless recommendable. (Original Hochs und Tiefs halten sich die Waage Ein Geburtstagsessen wird mit einem schönen Zweiertisch eingeleitet. Die Bedienung ist freundlich und zuvorkommend. Wir fühlen uns auf Anhieb sehr wohl. Den Auftakt macht ein Gruss aus der Küche: ein Lachstatar, sehr fein geschnitten, der Geschmack des Lachses wurde sehr gut hervorgehoben. Dazu ein kleines Meerettich Häubchen, sehr mild gehalten aber wunderbar den Lachs ergänzend. Vorspeisen Der Nüsslisalat mit Ei kommt mit Ei überladen daher. Der Ei Geschmack selbst ist schwer spürbar. Was wurde mit dem Ei gemacht? Wir kommen nicht drauf. Die Terrine: ein unglaubliches Erlebnis, eine wunderbare Terrine. Sie ist das Highlight des Abends. Sie ist fein, geschmacklich intensiv und die Konsistenz ist herausragend. Das Brioche dazu ist sehr fluffig und ergänzt das Gericht perfekt. Danke für diese Terrine! Quitten Karotten Suppe Auf der Karte nicht aufgeführt, aber wir glauben, sie ist mit einer Fleischbrühe angesetzt. Das Nennen wäre für Vegetarier empfehlenswert, falls dem so ist. Taittinger Comte 2007 Ein ausgezeichneter Champagner, den wir sehr geniessen. Die erste Flasche neigt sich zu Beginn des Hauptgangs zu Ende. Die zweite Flasche selbes Etikett, selber Jahrgang ist vom Korken her schon nicht ganz zufriedenstellend. Wir probieren und machen darauf aufmerksam, dass die zweite Flasche viel mehr Säure aufweist und einen bitten Abgang hat. Die Kellnerin weiss nicht recht, wie reagieren. Wir wollen aber die Stimmung nicht schmälern und lassen einschenken. Aber das Glas bringen wir leider nicht runter. Schade um den schönen Wein, den wir natürlich bezahlen. Wir sprechen die Winzerei Taittinger deswegen an. Leider schmälert die verbliebene Bitterkeit unseren Genuss beim Hauptgang. Hirsch mit Nusskruste Der perfekt gebratene Hirsch wird von einer Nusskruste umgeben, die leider im Streit mit dem Hirschen steht. Sie hebt den Hirschen nicht hervor, sie begräbt ihn. Schade, aber eine spannende Idee, die es sicher auszubauen gilt. Die Kruste kann man wegkratzen, dann ist der volle Genuss des Hirschfleisches wieder da. Der Spinat auf Aubergine ist wieder ein Hochgenuss. Ein unglaublicher Geschmack! Käsespätzli mit Apfelmus Ein einfaches Gericht, das sonst eine Schwere in sich birgt, erfährt hier eine Leichtigkeit, die ein neues Erleben von Käsespätzli zulässt. Das ist sehr schön. Mit etwas zusätzlicher Raffinesse könnte das Gericht mehr als nur gut werden. Es wirkt noch etwas fad. Bedienung Die Gastgeberin selbst hält sich zurück. Spätestens beim Taittinger hätten wir gedacht, sie würde von alleine kommen. Aber wir wollten das Geburtstagsessen nicht mit einer Reklamation schmälern, deshalb war es uns in dieser Stimmung recht, hat sie nicht reagiert. Das Personal hebt sich von ihr aber weit ab: alle sind äusserst freundlich und teilweise kaum spürbar, wenn man sich unterhält. Das ist ziemlich perfekter Service in unseren Augen! In der Zigarrenlounge geniessen wir ein Dessert, der mit einer Geburtstagsüberraschung gekrönt wird. Lieben Dank! Fazit: ja und nein. In dieser Preisklasse (SFr. 640. muss ein wenig mehr stimmen. Dennoch empfehlenswert.
