They provided the proper paper covering to avoid contamination. All the steps were explained and at the end in the restaurant on top of the factory we had a tasting. Best Prosciutto yet. The bad part is not sold in the US.

We visited La Perla and did the tour of the facilities with the owner Carlo, which was very interesting, educational and fun! After the tour, we were treated to generous sampling platters upstairs in the restaurant complete with bottled water and wine. And we had time to browse the gift shop and make purchases after. The tables filled the length of the room so it was seating ‘communal’ style which may bother some people, but we enjoyed it as we got to meet and chat with fellow guests. There were good clean washrooms and loved the guestbook for signing. We noticed the newspaper articles on the wall, one featuring the owner Carlo posing with Guy Fieri who had visited prior. It is very nice for Carlo and his lovely daughter to have Mr. Fieri’s endorsement as it speaks to the quality of the meats, cheeses and other items they produce. We had a great time here sampling the various meats, cheese and a balsamic vinegar glaze. If you’re on holiday, make sure that Carlo’s place (da Carlo sala degustazione) is on your tour wish list. If you’re driving within Langhirano it’s worth a stop for a tasting even if you don’t do the tour. It's also a nice place to stock up on regionally-produced items including wines, sauces, jams and many other handmade products.
