Wolfgang's Steakhouse - Tribeca - Feedback

Came here for my birthday, we were a little late for our reservation but still got seats right away.

Why are waiters at steakhouses always old, somewhat large, white guys ? Seriously, is there a minor league for steakhouse waiters that we don't know about ?
