Here on a recent trip to Rock Springs, portions were generous, prices were reasonable, and the dining area was clean. It was also convenient to the motel where we were (Country West). I have the chicken taco plate, Nabeby has the crushed beef plate. We could make 2 meals from 1 each. I especially liked that they did not spin on the salad, and they had a variety of salsa available. Not sure if we'll be next in Rock Springs, but if the day rolls, we'd definitely eat again at Pancho.
Don't be put off by the fast food look of this place! It's genuinely fantastic! The food offers a variety of delicious flavors, and the portions are enormous—I barely managed to finish two-thirds of my meal. I'm truly impressed by the quality of the food. The trip to Rock Springs is absolutely worth it. That's right—we came all this way just for Panchos!
Good Roads offers tacos around the clock, 24 hours a day. While the guacamole isn't quite what you'd expect—it's more like a thin green goo— the salsas are tasty, and the pickled carrots and jalapeños are delightful, reminiscent of the Mexican taco trucks on the West Coast. The crispy tacos are quite good as well. I'm not really a fan of the burrito selections, but I appreciate having access to quality tacos and drinks all night long—definitely a better choice than McDonald's. They also maintain clean bathrooms open 24 hours. The interior seating is comfortable, and the outdoor seating is lovely on warm evenings.
The bacon breakfast burrito was outstanding! I added green chili, tomatoes, and onions, and it was absolutely delicious. My wife ordered one with chicken, and hers turned out just as great. They are quite large, so we saved half for lunch! The service was excellent, and the staff was very friendly.
