The Cook And Butcher - Cowichan Bay

I dined there last night and enjoyed the chicken and pork carbonara. It was absolutely delicious! The chicken was cooked to perfection, and the combination of arugula and pancetta was fantastic. The dish was enhanced by a generous amount of a strong cheese—either Parmesan or Asiago—and plenty of garlic. I was truly impressed. I’m not sure if freshly ground pepper is no longer offered, but honestly, it didn't need it; that would be my only small complaint. The service was excellent—our server struck a perfect balance between being attentive while also allowing us to enjoy our conversation. The views were stunning, and the light fixtures were quite impressive. I used to work there years ago, and I can say without a doubt that it has improved significantly since then.

We are currently staying at the hotel and decided to order takeout. The food was fantastic! We tried the buffalo dish and the meatloaf, both of which were delicious. The service for pickup was outstanding; they really took care of us.

This was my first visit, and it came highly recommended by friends. I was meeting a client here, but we struggled to find anyone to seat us. After waiting a few minutes, we decided to walk in and discovered our client had arrived early, so we joined him. Unfortunately, it took about 20 minutes for a server to attend to our table and take our drink orders. I chalked it up to the possibility that our server was new, as this isn't the level of service I typically expect. However, the food was excellent, and the view was even better. We'll definitely give it another try the next time we're in the area.

The food was great, the view was spectacular, but the service sucked! We watched two other tables who arrived after us receive their meals and nearly finish their meals before we were served. Not even a refill of our water nor an apology from our server for the long wait. Not impressed!
